Suitable simulation / test speeds depends on the type of bike, rider and goals.
If you were doing simulations to compare to tunnel data, obviously you would want to do similar to what others have done: aero road bike at 40 or 45 kph. But given that many of your customers probably aren’t pros, 30 or 35 kph is more meaningful to them. If only one speed, 40 kph. If two, 35 and 45.
For gravel it’s going to vary more, since you have amateurs racing as short as 30 miles or as much as 300 miles, which will be a huge difference in speed. I would probably go with 30 kph.
