Evaluate my "training plan"

Here’s the gist - using TR to maintain/grow my fitness - not targeting any real events, and I don’t mind conservative growth of FTP given I’m still trying to lift and incorporate running 1x a week. Basically trying to be a general all around athlete with cycling doing the heavy lifting of my cardio work.
I’ve come to understand that volume > intensity and fortunately my schedule allows for a little more variability in workout duration, less so days though, so I’m trying to train for more volume before ramping up intensity.

Currently very out of shape (175w FTP @ 80 kg) but here’s my planned schedule.

Mondays: Sweet Spot following something in SST Progression Sweet Spot Progression
Tuesdays: Gym strength-focused lifting day
Wednesday: Endurance, trying to go 5-10% longer every week until FTP gets bumped up
Thursday: Gym functional strength/mobility
Friday: Threshold Work following threshold progression
Saturday: Upper body at the gym + run
Sunday: Rest.

I assume at some point I’ll probably plateau - I suppose once that happens it makes sense to vary it up, maybe throw a Vo2 max block in there? Are there any glaring issues with the plan above?

And if anyone has tried something like this, how far has it gotten you from a fitness (FTP) standpoint?

I’ll let the coaches jump in and say more, but the first thing I noticed is you’ve got your SS scheduled after your rest day. I personally prefer to do my hardest workouts after rest, so with your method, I’d swap the TH and SS days. This will also benefit your plan to run on Saturdays. I’d also swap in a VO2 workout on that first day once in a while.

Assuming you’re using TR workouts here, since you’re doing 2 days of intensity per week, I’d just schedule a low volume Masters plan with the MWF targets you’re aiming for and adjust/delete as needed.

There is no mention of rest weeks in your plan. Even without pushing your limits this can lead to digging a hole. I suggest adding a lower intensity week every 4 weeks.
