Measuring Heart rate recovery with intervals

Suspect I’m probably overthinking this but here goes.

I’d like to start tracking my heart rate recovery as one of my trending metrics. For an outdoor run this is fairly easy, stop running and measure at 1 and 2 minute intervals immediately after stopping. But if I’m coming off a sweet spot interval workout then I’m wondering if I should measure post cool down or immediately post last interval before going into the cool down period.
