After a long season of Gravel Races (4), Road Races (2) and Cyclocross Races (16-18) I’m not sure what TR plan or program I should be doing.
Last race of the season (Cross) is November 29.

This is of course age and training history dependent, but if you were training consistently 5-6+ times a week, high mileage/TSS, I’d take a week or two off and then 3-4 weeks of traditional base with some accelerations and maybe a weekly sweet spot or tempo. After a long, hard season it your body needs a break, not to mention it may be nice to have the mental break as well.
Even if you are someone who isn’t peaking for a big race and prefers to just kinda be fit all year there’s still a need to take a break and step back at the end of the season. It may be a temporary step back but in the end you’ll be taking two steps forward!

We’d definitely back up the recommendation by @Jolyzara to take an end-of-season break after a long season like that. Sounds like a good time to take that break would be after November 29th with your last CX race.
Personally, I’ve found at least 2 weeks off to be helpful (and even necessary!) for my own end-of-year breaks.
After that, how you approach your training will depend on your goals and events for next season. You’ll want to consider when your A-priority races are and build your training out around them. Plan Builder can help you out with all of that!
