Green bananas are not for me. I buy a wackload of bananas every week, for me and my daughter. We like waiting until they get nicely spotted, and then we peel them and freeze them for smoothies.

For real. Green bananas are an absurd choice.
Different sport alert: most ultimate players I know learned quickly that the ridiculous green bananas that the TD bought that morning as “tournament food” taste nasty and will mess up your day.
Folks, please eat ripe bananas.
This is a major point of contention here at TrainerRoad and Jonathan’s taste for green bananas makes me generally suspect of his judgement and character. Everyone knows bananas are best eaten when fully and completely yellow, ideally with a few brown spots. Anyone who disagrees is fundamentally and objectively wrong.
One of the difficulties in life is balancing the purchase of bananas in the correct mix of initial ripeness against the consumption rate of the family members and their desired and accepted banana ripeness. Add in the variability in availability of bananas of specific ripeness for purchase, and you end up with a perfect case for an AI app.

I’ve thought that unripe bananas have less simple sugars and more complex starches, which changes as the bananas ripen. Would the carbs not be absorbed faster if they were simple sugars instead of more complex starches which I would think would require extra digestion time?

My grandad had a big allotment and we spent most of the summer going and getting fruit off the bushes next to the motorway, I do wonder how much lead I’ve got in me from it.
I eat them green, yellow, spotted, whatever. Food is food and I don’t feel like going to the store multiple times a week to get perfectly ripe bananas.

I also realised that when doing banana pancakes, using greener ones makes the batter thicker which is nice.

Had a bit of that nice dry “my tongue is glued in place in my mouth” feel but not bad. All looks the same in a day or two anyway

Has to be somewhat yellow maybe light spotting at most. I don’t like black or heavy spotted, but green… might as well eat an uncooked plantain.
Also fried plantains with ginger and chili pepper are under-rated. Convince me I’m wrong.
I tend to dispose of a banana skin a few ways.
At the start of a TT when the car is locked its tossed behind a hedge.
Sometimes its tossed out of site in a ditch or stream when I am on a club run.
Sometimes its tossed in a bin if its handy.
But if I am on my own and there no one to see or I am in town, I put it back it back in my pocket and take it home or to the first bin I see.
