Yuck. I generally eat food that tastes good to me. And green bananas don’t taste good.
I make banana bread a lot. Like every weekend. I don’t really measure, especially the banana part (err on the side of too much banana) and it always seems to work! I just bake until the toothpick comes out clean. Chocolate chips and pecans and my secret ingredient. I add chocolate chips and pecans to all quick breads now — pumpkin, zucchini and banana bread — it always makes it even better.
In a medium bowl 2 T of ground flaxseed and like 4T of water and mix it together. Add about 1/4 c of some sort of milk (I use almond a lot). Then I add about 1/4 c of applesauce, a dash of vanilla extract and a little splash of avocado oil. Then I mush in like 3-5 very ripe bananas and about 3T to 1/4 c of brown sugar (depending on how sweet the bananas seem). Then I add 2 cups of flour, 1t baking powder, 1t baking soda and a dash of salt. I fluff the top powdery stuff I together to disperse the leavening agents, then mix it all up. Then I add chocolate chips and roughly chopped or whole pecans.
I bake at 375 in a parchment lined loaf pan until the kitchen smells amazing and a toothpick comes out clean.
I have definitely become a less picky banana eater as I have gotten older. I used to only like the perfectly yellow ones. Now I eat so many a day, I will eat them from quite a spectrum. Definitely prefer spotty over too green, though.
Even this is a tad too green for me.

When my bananas goes a bit too ripe, and that means almost a ratio of 50:50 yellow and black. They go directly into the freezer. Perfect for my recovery smoothies, mixed with frozen blueberries, raspberries and a scoop of whey protein.
I’m offended by your views on bananas but I’m fully in favor of on-bike potatoes!
Don’t knock it 'til you try it. A baked potato is the perfect size for a jersey pocket, it’s absolutely delicious, and is (for me at least) a decent fuel source for low to moderate intensity work. And it’s a great conversation starter to whip out a potato and start eating it like an apple mid-ride.
How to you keep the bacon bits, sour cream, and mounds of butter from getting messy in your jersey pocket? Potato required items!

I try so hard to be non-judgemental but this thread is really challenging me to rise above myself and be a better person. Though I do like the shock value of a pulling a baked potato out of my pocket during a group ride. That would be hilarious to see how people react. Do you have to be careful to not smush it in your pocket? Russet or sweet?
Some days I fill my bottles with potato juice.

If it ain’t ripe, it aint right.
Protip: if you have some disgusting green bananas but can’t wait to make a smoothie. Put em in the freezer 20-30 minutes (but not too long). They get a tid bit sweeter and more bareable to consume.
If i want non-sweet green banana, i’ll have freaking plantain, which is a whole different thing.
