After listening to last weeks podcast and listening to @Jonathan suggestions about meal prep, I want to share a good “go to” recipe that I use for lunches and maybe others can put their recipes on here as well. I make this on Sunday every week and it is my base for lunches. It is cheap and super easy to make.
Ingredients:
-Low Sodium Beef Bone Broth (3 cups)
-Costco Quinoa (2 cups)
-Black Beans (2 cans)
-Trader Joes Taco Seasoning (2 tsp)
-Frozen Veggies
-Bolthouse Farms Cilantro Avocado Dressing
I put the beef broth and quinoa in an instant pot. I set the pressure to 3 minutes and turn the keep warm function on. After the 3 minutes of pressure is complete, I let it sit for 15 more minutes and then release the pressure. I mix in the seasoning, fluff, then add the beans and veggies. I divide it into bowls for the week and refrigerate. I add the dressing to the top before I eat. This can be eaten cold or warm.
The nutritional content for the everything is 2245 calories, 20 g fat, 373 g carbs, 128 gram protein. You can divide these numbers by how many servings you make this.
I hope this starts a decent thread because I am always looking for easy and nutritional meals.
